Hey friends! Okay. So, we made these incredible strawberry cheesecake parfaits a few days ago and I just had to share them with you! They're perfect for date night or as a snack...heck, make them for breakfast. It's fine. There's no rules here.

What I love about this no-bake cheesecake parfait (besides the no-bake part) is that most (if not all) of the ingredients are things you probably already have at home!

STRAWBERRY CHEESECAKE PARFAITS FOR TWO

You will need:

  • six strawberries (diced)
  • 1 tbsp of granulated sugar
  • four graham crackers (broken down to crumbs)
  • 1 tbsp of butter
  • 1/2 tbsp of brown sugar
  • 1 cup of heavy whipping cream
  • 1/3 cup of powdered sugar
  • 1 package of cream cheese (8 oz) - softened
  • 1 tbsp of lemon juice

Directions:

  1. Let's start with the crust! Pop the four graham crackers into a ziploc bag, seal tight and start breaking them down to crumbs. I like to use a rolling pin but you can get creative trying to smash them by stepping on them, having your kids thrown them around,etc. Did I mention emphasis on making sure the baggie is sealed TIGHTLY? Once they're smashed up, add melted butter and brown sugar to them and mix.
  2. Dice up six (give or take a few) strawberries and dice them up. Add the sugar to the strawberries, mix them and let them sit. The sugars breakdown the strawberries and create a nice little syrup with them. It's so good!
  3. Grab a large bowl and whip your heavy whipping cream until it's light and fluffy but not yet stable. Add the powdered sugar. Whip until you can create stiff peaks.
  4. In a smaller bowl, add the softened cream cheese and lemon juice together and mix.
  5. Combine the whipped cream with the cream cheese and combine well.
  6. Now it's time to start layering: graham crackers, cheesecake, strawberries and repeat! PS. If you don't layer, this makes four parfaits.
  7. Enjoy!
Does this properly show the layers? No. 😂 
But hopefully, you can see it through all the cheesecake we dolloped in there!
